• 1 cup cornmeal

• 3/4 cup all-purpose flour

• 1 tablespoon sugar

• 1 1/2 teaspoon baking powder

• 1/2 teaspoon baking soda

• 1/4 teaspoon salt

• 2 large whole eggs

• 1 1/2 cups buttermilk

• Glass measuring cup

• Whisk

• Rubber spatula

• 8-inch baking dish

• 2 mixing bowl

 

What to Do

• Preheat the oven to 425 degrees

• Coat the entire inside of the baking dish with softened butter and set aside

• Put the corn meal and flour into one mixing bowl and use the whisk to incorporate the ingredients and break up any lumps

• Add in the sugar, salt, baking soda, and baking powder and incorporate thoroughly with the whisk

• Set this mixture aside

• Put the whole eggs in a separate bowl and use the whisk to beat them lightly

• Add in the buttermilk and combine

• Put the 6 tablespoons of unsalted butter in the glass measuring cup and microwave until melted

• Mix the melted butter into the wet ingredients mixture

• Pour the wet ingredients mixture into the cornmeal and flour mixture and use the rubber spatula to combine thoroughly

• Mix until there are no dry spots, but the mixture is still lumpy

• Pour the batter into the prepared baking dish

• Bake for 20 to 25 minutes until baked through

• Remove from the oven and allow to cool for 5 minutes in the dish before carefully inverting onto the wire baking dish to cool further before serving
